Mississippi Mud Pie

OK, this is not a food blog (only) but there seems to be a theme so far, anyway. I’m sure I’ll post something other than a recipe at some point!

When I posted my veggie stock and risotto recipes, a friend from the past mentioned that he still used my “famous” (among me) chocolate pie recipe, which I used to make in the dorm kitchen in college. And then a few more people asked about it, so here it is!

I got this recipe from a girlfriend’s mother during our brief courtship. She called it “Mississippi Mud Pie” so I do too, even though it has no ice cream (not that ice cream wouldn’t be good alongside!). It’s simple and basic and quite impressively rich, chocolate-y, and delicious:

Mississippi Mud Pie
Recipe Type: Dessert

Cook time: 45 mins

Serves: 8
Ingredients
  • A graham cracker crust
  • 3 oz unsweetened chocolate
  • 1 stick of butter
  • 3 eggs, beaten until frothy
  • 1 T vanilla
  • 1 c sugar
  • 3 T Karo syrup
Instructions
  1. Preheat oven to 350.
  2. Make graham cracker crust.
  3. Melt together the chocolate and butter over low heat.
  4. Meanwhile, mix together the remaining ingredients, then mix chocolate mixture into egg mixture until well combined.
  5. Pour into a graham cracker crust, bake in 350 oven until top starts to crack, about 45 minutes

I’m afraid I don’t have a picture of the pie – although with the cracks it looks less delicious than it really is! Most people will find they can only eat a small piece of this pie at a time, because it’s so rich. (This was never a problem for me.)
